Hi, I’m Dualtagh McLaughlin — chef, food lover, and someone who has spent far too many years thinking about what we’re having for dinner!
With over 30 years working in kitchens and food, I’ve had the pleasure of cooking everything from good old Irish comfort food to flavours inspired by the Caribbean and plenty in between.
Food has always been more than just a job for me. It’s about people, memories, family and, most importantly, enjoying yourself around the table.
From Coddle to Curry is my little journey through the foods I love. It brings together some of the traditional Irish dishes I grew up with alongside the colourful flavours and influences that have found their way into modern Irish cooking.
There are plenty of hearty favourites, a few Caribbean twists, some sweet treats and, hopefully, something to make you hungry along the way!

I grew up with an Irish father and a Trinidadian mother of Indian and Lebanese heritage, so there was never just one style of cooking in our house.
From hearty Irish favourites to the spices and colour of the Caribbean, food was how our family celebrated, connected and shared stories.

Dualtagh’s career has taken him through professional kitchens across the Caribbean and Ireland, bringing together different flavours, techniques and influences along the way.
From traditional Irish cooking to Caribbean spices and everything picked up through years in the industry, that mix of experience is what eventually became From Coddle to Curry.
